Rollinia, or custard apples, are in the Anonaceae family, close cousins of sugar apple, soursop, and cherimoya. The fruits can range from fist-sized to nearly basketball size. The flavor and texture of this popular fruit evolves as it continues to ripen. The fruit is fully ripe when the skin has lost all green and is completely yellow (dark tips are common but are not related to ripeness). When fully ripe, the aptly-named custard apple is super creamy and custardy in its texture, with a banana-cream-pie flavor. However, the fruit can also be eaten when some green is still present in the skin, resulting in firmer texture and pronounced lemon flavor, like lemon merigue pie.



Rollinia are extremely delicate and bruise easily, so DON'T SQUEEZE THEM and handle them gently. Large fruit are especially prone to bruising if left on a hard surface to ripen, as they're crush their underside with their own weight.
