Ice cream beans are giant bean pod fruits that come from the Inga edulis tree. They got their name because the white, slightly juicy, fluffy fruit inside the bean pods is remniscent of vanilla ice cream with a mild floral flavor. The fruit pulp separates easily from the black seeds inside. They are ripe when very green with some brown on the edges, and plump. The bean pod tuns more yellow-brown the longer the fruit is off the tree and fruit begins the dry out.
