Finger limes, or "Champagne" limes, are a strange finger-sized and -shaped citrus fruit. Called "champagne" limes because of the way the vesicles (the little juice sacs inside citrus)bubble out of the fruit when cut in half. These little citrus bubbles/vesicles are crunchy and super sour, with a flavor much like the lemony-floral aroma of the fragrant skin. Kiddos especially love these weird little fruits, and all the better since they're high in Vit C! The cut fruit makes a beautiful plate garnish, while the fruit insides add a fun splash to drink rims, sushi, fruit salads, and papaya halves.
