Feta is a slightly-firm, brined cheese. Pressed cheese curds from goat milk is cut into blocks which are then briefly aged in salt water, lending an excellent briney flavor to this crumbling cheese. Goes well with other salty sides like pickled peppers and salami and brightens up a simple salad. Save the brine to add to homemade dressings and sauces for some extra umami.
